Cucumber Strips Dressed with Sesame Oil
|Cucumbers||2 , peeled and cut in half lengthways|
|Vinegar||1⁄4 Cup (4 tbs)|
|Water||1 Cup (16 tbs)|
|Sesame oil||1⁄3 Cup (5.33 tbs)|
|Onion||1 Large, finely chopped|
|Garlic||6 Clove (30 gm), crushed|
|Sesame seeds||2 Tablespoon|
Remove the seeds from the cucumbers and cut into strips.
Put into a saucepan and add all the vinegar except 1 tablespoon, the water and seasoning and bring to the boil.
Reduce the heat to low and simmer for 5 minutes, or until the strips are translucent.
Drain and transfer the strips to a shallow serving bowl to cool to room temperature.
Heat the oil in a frying-pan.
When it is hot, add the onion and garlic and fry gently for 5 minutes, or until they are lightly browned.
Transfer to a plate.
Add the sesame seeds to the pan and fry gently until they are lightly toasted.
Tip the sesame seeds and oil into the onion and garlic, add the reserved vinegar and mix.
When the cucumber strips are cool, pour over the sesame oil mixture and toss gently
