Sweet Potato Ring

Ingredients
  Sweet potatoes 1 Kilogram (2 lb, cooked and peeled)
  Eggs 2 , separated
  Butter 3 Tablespoon, melted
  Ginger 1 Teaspoon, ground
  Stale bread slices 4 , ground to make bread crumbs (crust removed)
  Brown sugar 3 Tablespoon
  Cinnamon 2 Teaspoon
  Pecans 3 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 350°F (180°C).
2) Grease a ring pan lightly and set aside.

MAKING
3) In a bowl, mash potatoes with egg yolks, butter and ginger.
4) In an another bowl, whisk the egg whites until stiff.
5) Lightly fold the egg white into the potato mixture.
6) Transfer the potato mixture into the ring pan

FINALIZING
7) In a bowl, mix together bread crumbs, sugar, cinnamon and pecans.
8) Dredge the sugar mixture over the potato mixture.
9) Bake the potato mixture in the oven for 20 minutes.

SERVING
10) Serve the Sweet Potato Ring with roasts or barbecues if desired.
