Cranberried Sweet Potato Relish

Join Lisa Shively in her kitchen to prepare this wonderful Sweet Potato Cranberry Relish. Enjoy Sweet Potatoes year-round!
Ingredients
  Sweet potato 1 Small (Peeled And Diced)
  Cranberries 2 Cup (32 tbs)
  Orange 1 (Peeled And Sectioned)
  Sugar 1⁄2 Cup (8 tbs)
  Jalapeno pepper 1 (Seeded And Chopped)
  Chopped pecans 1⁄2 Cup (8 tbs)
  Fresh cilantro 3 Tablespoon
  Salt 1⁄8 Teaspoon
  Cinnamon 1⁄8 Teaspoon
Directions

Place the sweet potato in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or just until tender. Drain. Set aside. In a food processor, combine the cranberries, orange, sugar and jalapeno. Process until finely chopped, but not mushed. Pour into a bowl and stir in the sweet potato, pecans, cilantro, salt and cinnamon. Cover and refrigerate for at least 1 hour before serving.
