Sweet Potato Cheesecake
|Sour cream||1⁄2 Cup (8 tbs)|
|Cooked mashed sweet potatoes||3⁄4 Cup (12 tbs) (Cold)|
|Baby food apricots||3 Tablespoon|
|Lemon juice||1 Tablespoon|
|Milk||1⁄8 Cup (2 tbs)|
|Cheesecake mix||1 Pound (1 Box)|
Mix sour cream, sweet potato, apricots, lemon juice, and milk and blend thoroughly.
Add cheesecake mix and beat 3 minutes until thick.
Turn into crumb crust prepared according to directions on package.
Reserve a few crumbs to sprinkle on top, or top with sour cream topping.
Bake at 400°F for 8 minutes.
Chill 2 hours or more.
