Smoked Pork Chops With Sweet Potatoes
|Sweet potatoes||2 Pound (About 4 Medium Sized Ones)|
|Butter/Margarine||4 Tablespoon, melted|
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Smoked pork chops||4 , cut 3/4 inch thick|
|Canned sliced pineapple||8 Ounce, packed in its own juice (1 Can)|
Prepare and boil sweet potatoes
Drain, peel, and cut in half lengthwise.
Pour 2 tablespoons of the butter into a 9-inch square baking dish and stir in 1/4 cup of the sugar.
Arrange potatoes in dish in an even layer and sprinkle with cinnamon and remaining 1/2 cup sugar.
Arrange chops over potatoes.
Drain pineapple, reserving liquid.
Cut pineapple slices in half and place over chops.
Pour reserved liquid and remaining 2 tablespoons butter over all.
Cover and bake in a 350° oven for 10 minutes.
Uncover, baste with pan juices, and continue baking for 20 to 30 more minutes or until fruit and chops are lightly browned; baste several times.
Garnish with parsley.
