Sweet Potato Pudding

Ingredients
  Eggs 4
  Skim milk 2 Cup (32 tbs)
  Sweet potatoes 3 Cup (48 tbs), peeled and grated
  Butter 3 Teaspoon
  Granulated sugar replacement 1 1⁄4 Cup (20 tbs)
  Wheat germ 1⁄4 Cup (4 tbs)
  Ground cinnamon 1⁄2 Teaspoon
  Ground cloves 1⁄4 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
Directions

Beat eggs until light and fluffy.
Add remaining ingredients and stir to mix well.
Pour into a well greased pudding dish.
Bake at 325°F (165°C) for 30 minutes or until set and top is lightly browned.
