Sweet And Sour Dandelion Greens

Ingredients
  Tender young dandelion leaves 8 Quart, well washed (A Dishpan Full)
  Cold water 1 Cup (16 tbs)
  Egg 1 , lightly beaten
  Brown sugar 1⁄4 Cup (4 tbs)
  Cider vinegar 1⁄2 Cup (8 tbs)
  Butter 2 Tablespoon
  Hard-cooked eggs 2 , chopped
Directions

1. Put the dandelion greens in a large kettle and cover with water. Bring to a boil, turn off the heat, and let stand for 10 minutes. Drain well.
2. Combine the egg, sugar, vinegar, butter, and 1/4 cup water in a saucepan. Heat slowly, while stirring, until slightly thickened.
3. Remove from the heat, add the greens, and stir to coat evenly.
