Sweet Potato Croquettes

Ingredients
  Sweet potatoes/Yams 1 Pound
  Butter 2 Tablespoon
  Cream 2 Tablespoon
  Brandy/Orange juice 1 Tablespoon
  Salt To Taste
  Pepper To Taste
  Soy sprouts 1⁄2 Cup (8 tbs), roasted and ground butter for sauteeing
Directions

Cook potatoes whole in boiling water until soft.
Peel while warm and place in bowl.
Heat together the butter and cream until butter is melted.
Mash potatoes with butter and cream, brandy, salt and pepper.
Make into small cakes and dredge in flour, then coat with soy sprouts.
Refrigerate.
Saute in butter until crusty and golden.
