Ingredients
  Soaked raw sunflower seeds 1 1⁄2 Cup (24 tbs)
  Chopped dill 1⁄2 Cup (8 tbs)
  Sweet onion 1⁄2 Cup (8 tbs)
  Celery stalks 2 , chopped
  Tomato 1 , coarsely chopped
  Lemon juice 4 Tablespoon
  Jalapeno 1⁄2
  Salt 1 Teaspoon
  Extra virgin olive oil 1 Teaspoon
  Freshly ground black pepper To Taste (Use Fresh)
  Bell peppers 1⁄2 Cup (8 tbs), chopped into matchsticks
  Cucumbers 1⁄2 Cup (8 tbs), chopped into matchsticks
  Nori sheets 6
  Lettuce leaves 4 (Adjust as Required)
Directions

Combine the sunflower seeds, dill weed, onion, celery, tomato, lemon, juice, chile, salt, olive oil, and pepper to taste in the food processor, and pulse until evenly chopped but still slightly chunky. Carefully spread the mixture evenly over each nori sheet, roll them up, and slice into
1 1/2-inch pieces. Arrange the pieces on a bed of lettuce and serve.
