Stuffed Baked Potato Halves
|Mild italian sausage/Sweet italian sausage||3⁄4 Pound, casing removed|
|Shallot||1 Large, finely chopped|
|Butter||4 Tablespoon, melted|
Preheat oven to 375° F.
Mix sausage and chopped shallot.
Melt butter in small saute pan.
Peel potatoes; cut in half lengthwise.
Carefully hollow out centers with melon ball cutter, allowing 1/2 inch-thick edge (potato halves look like a baked potato shell before stuffing).
Rinse potatoes in cold water, pat dry with paper towels, roll each potato in melted butter, and place in a small baking dish or pan.
Add remainder of melted butter to baking dish.
Stuff sausage mix in each potato half.
Cover with aluminum foil or wrap each potato in foil and place on small baking sheet.
Bake at 375° F for 30-35 minutes or until fork tender.
