Sweet Potato Pie
|9 inch unbaked pie shell||1|
|Sweet potato||2 Cup (32 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Dietetic maple syrup||2 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Meringue||1 (1 Recipe)|
Combine sweet potato puree, eggs, sugar replacement, maple syrup, vanilla, spices, and skim milk in a large bowl.
Beat to blend.
Pour into unbaked pie shell.
Bake at 400°F (200°C) for 45 to 50 minutes or until knife inserted in center comes out clean.
Spread meringue over pie, sealing edges.
Bake at 350°F (175°C) for 10 to 12 minutes or until the peaks begin to brown.
