Sweet And Sour Greens
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Torn romaine lettuce||3 Cup (48 tbs)|
|Torn fresh spinach||3 Cup (48 tbs)|
|Hard-cooked eggs||4 , sliced|
Fry bacon in a large skillet until crisp.
Remove and drain on paper towels.
Pour off drippings except for 2 tablespoons.
Add vinegar, water, and sugar to drippings.
Bring to boil.
Boil 1 minute, stirring constantly.
Combine romaine, spinach, and eggs in a large bowl.
Pour hot dressing over them.
Toss lightly but thoroughly.
Add salt and fresh pepper as desired.
