Pineapple Sweet Potato Islandia
|Sweet potatoes||6 Medium, cooked until just tender peeled|
|Pineapple||1⁄2 Large, peeled and cut in wedges|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Brown sugar||3⁄4 Cup (12 tbs), packed|
|Water||1⁄2 Cup (8 tbs)|
|Monosodium glutamate||1⁄4 Teaspoon|
Arrange halved sweet potatoes and pineapple wedges alternatively in well greased baking dish.
Combine remaining ingredients in skillet and simmer 5 minutes.
Pour mixture over sweet potatoes and pineapple, bake at 400°F. for 20 to 25 minutes, turning occasionally to glaze properly.
