Zesty Vegetable Skewers
|Garlic||1 Clove (5 gm)|
|Olive oil/Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Lemon juice||3 Tablespoon|
|Italian seasoning||1 Teaspoon|
|Fresh mushrooms||8 Medium|
|Zucchini||2 Small, sliced 1/2 inch thick|
|Onions||2 Small, cut into sixths|
In a small bowl, mash garlic with salt to form a paste.
Stir in oil, lemon juice, Italian seasoning and pepper.
Thread vegetables alternately onto skewers; place in a shallow baking pan.
Pour garlic mixture over kabobs; let stand for 15 minutes.
Grill for 10-15 minutes, turning frequently, or until vegetables are just tender.
