Sweet Potato Cookies
|Sugar||1⁄4 Cup (4 tbs)|
|Concentrated acesulfame k/Three 1 ounce packets||9 Gram (Three 3 Gram Packets)|
|Nonfat cream cheese||4 Cup (64 tbs)|
|Sweet potatoes||1 Cup (16 tbs), cooked, mashed|
|Margarine/Butter||1⁄4 Cup (4 tbs)|
|Oats||2 Cup (32 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Ground cloves||1⁄4 Teaspoon|
|Apple||1 , peeled, cored, and chopped fine|
Beat together the sugar, acesulfame-K, and cream cheese until smooth.
Add all the other ingredients except the chopped apple.
Beat the mixture well, then stir the apple in.
Drop the batter by tablespoonfuls onto a cookie sheet coated with non-stick cooking spray.
With the back of a spoon, press each cookie into a patty.
Bake in a 350°F (180°C) oven for about 15-20 minutes.
Cool the cookies on a wire rack.
