Crisp Sweet Relish
|Cucumbers||8 Cup (128 tbs), ground|
|Onions||4 Cup (64 tbs), ground|
|Carrots||2 Cup (32 tbs), ground|
|Sugar||7 Cup (112 tbs)|
|Vinegar||4 Cup (64 tbs)|
|Celery seed||2 Teaspoon|
|Turmeric||1 Teaspoon, ground|
|Ground nutmeg||1 Teaspoon|
Combine the cucumbers, onions and carrots in a large bowl; sprinkle with salt.
Cover with ice cubes.
Let stand for 6 hours; drain.
Rinse and drain thoroughly.
In a large kettle, combine sugar, vinegar, celery seed, turmeric, nutmeg and pepper.
Add vegetables; bring to a boil over medium heat, stirring often.
Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally.
Pack hot into hot jars, leaving 1/2-in.headspace.
Process for 10 minutes in a boiling-water bath.
