Stir Fried Cucumbers
|Salad oil||3 Tablespoon|
|Water||1⁄4 Cup (4 tbs)|
|Soy sauce||5 Teaspoon|
1. Peel and cut each cucumber in half length wise; remove seeds. Then cut cucumber halves into 1-inch chunks.
2. In 4-quart saucepan over high heat, in very hot salad oil, cook cucumbers, stirring quickly and constantly, until evenly coated with oil. Add water, soy sauce, and sugar. Reduce heat to medium; cover and cook about 5 minutes, stirring occasionally, until tender-crisp.
