Spinach, Pear, And Shaved Parmesan Salad
|Baby spinach leaves||8 Cup (128 tbs), stemmed, rinsed and dried (Lightly Packed)|
|Bosc pears||2 , quartered lengthwise, cored and cut into long, thin slices (Do Not Peel)|
|Grated parmesan cheese||2 Ounce (1/2 Cup)|
|Extra virgin olive oil||1⁄2 Cup (8 tbs)|
|Balsamic vinegar||2 Tablespoon|
|Whole grain mustard||2 Teaspoon|
|Ground pepper||To Taste|
Place the spinach and pears in a large serving bowl.
Scatter the cheese on top.
TO MAKE THE DRESSING In a small jar with a tight-fitting lid, combine the olive oil, vinegar, mustard, sugar, salt, and pepper to taste.
Cover tightly and shake vigorously to blend the ingredients.
Taste and adjust the seasonings.
