Spinach, Pear, And Shaved Parmesan Salad

Ingredients
  Baby spinach leaves 8 Cup (128 tbs), stemmed, rinsed and dried (Lightly Packed)
  Bosc pears 2 , quartered lengthwise, cored and cut into long, thin slices (Do Not Peel)
  Grated parmesan cheese 2 Ounce (1/2 Cup)
  Extra virgin olive oil 1⁄2 Cup (8 tbs)
  Balsamic vinegar 2 Tablespoon
  Whole grain mustard 2 Teaspoon
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Ground pepper To Taste
Directions

Place the spinach and pears in a large serving bowl.
Scatter the cheese on top.
TO MAKE THE DRESSING In a small jar with a tight-fitting lid, combine the olive oil, vinegar, mustard, sugar, salt, and pepper to taste.
Cover tightly and shake vigorously to blend the ingredients.
Taste and adjust the seasonings.
