Mackerel With Leeks
|Leeks/3 white onions||3 , thinly sliced (White Part Only)|
|Fish broth||1⁄2 Cup (8 tbs)|
|Mackerel||2 Pound (2 Fish)|
|Powdered saffron||1⁄4 Teaspoon|
Cook the leeks in boiling, salted water for 5 minutes and drain.In a small, heavy saucepan, melt 2 tablespoons butter.
Add the leeks and saute over low heat for several minutes without browning.
Add the broth, salt and nutmeg.
Place the mackerel in a buttered oven-proof dish and sprinkle with saffron.
Spoon the leek mixture over the fish and dot with the remaining butter.
Bake in a preheated 400° oven for 15 minutes.
