Sauteed Plantains & Sweet Potatoes
|Cooking oil||30 Milliliter (2 Tablespoon)|
|Sweet potatoes/Yams||480 Milliliter, cooked and sliced (2 Cups)|
|Plantains||2 , peeled and chopped|
|Chopped green onion||120 Milliliter (1/2 Cup)|
|Cooked ham||120 Milliliter, chopped (1/2 Cup)|
|Garlic||1 Clove (5 gm), minced|
|Chicken broth/Beef broth||120 Milliliter (1/2 Cup)|
|Butter/Margarine||30 Milliliter (2 Tablespoon)|
|Chopped thyme/Chervil/dill/savory||30 Milliliter (2 Tablespoon)|
In a large skillet, melt 2 tbs butter and cooking oil until hot.
Add potatoes, plantains, onions, ham, if desired, and garlic.
Cook, stirring frequently, about 5 minutes.
Add broth; cover and simmer 10 minutes or until plantains are tender.
Add remaining butter and desired fresh herbs; season to taste with salt and pepper.
