Ingredients
  Raw carrots 1 1⁄4 Cup (20 tbs), finely grated
  Brown sugar 1 Cup (16 tbs)
  Oil 1⁄2 Cup (8 tbs)
  Eggs 2
  Flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Ginger 1⁄2 Teaspoon
  Apple sauce 3⁄4 Cup (12 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Butter 1⁄4 Cup (4 tbs)
  Cream cheese 1⁄2 Cup (8 tbs), softened
  Vanilla extract 1⁄2 Teaspoon
  Icing sugar 2 1⁄2 Cup (40 tbs)
Directions

Preheat oven to 350 °F (175 °C).
Butter a 9 inch (23 cm) cake pan.
In a bowl, mix carrots and sugar.
Fold in oil, then eggs.
In a second bowl, sift dry ingredients.
Add all at once to first mixture.
Fold in apple sauce and raisins.
Pour into pan.
Bake in oven 30-35 minutes.
Icing In a bowl, mix all ingredients.
Whip until smooth.
Spread over cold cake.
