Spicy Vegetable Stir Fry
|Fresh broccoli||1 Pound|
|Oil||1⁄4 Cup (4 tbs)|
|Zucchini||1 Medium, cut into julienne strips|
|Onion||1 Small, halved lengthwise and thinly sliced|
|Dried crushed red pepper||1⁄8 Teaspoon|
|Sliced fresh mushrooms||1 Cup (16 tbs)|
|Shelled sunflower seeds||2 Tablespoon|
|Soy sauce||2 Teaspoon|
Trim and discard tough ends from broccoli stalks.
Cut stalks into thin slices.
Separate heads into flowerets.
Heat Oil in large skillet.
Add broccoli, zucchini, onion and red pepper.
Stir-fry over medium-high heat about 5 minutes, or until broccoli is tender-crisp.
Stir-fry 1 minute longer, or until mushrooms are tender.
Stir in sunflower seeds and soy sauce.
