Ingredients
  Courgettes 8 , trimmed, cleaned and blanched
  Olive oil 4 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Garlic 3 Clove (15 gm), crushed
  Fine dry breadcrumbs 2 Ounce
  Finely chopped fresh parsley 2 Tablespoon
Directions

Cut the courgettes [zucchini] into 1/2 inch slices, crosswise, and dry them thoroughly on kitchen paper towels.
In a large frying pan, heat the olive oil over moderate heat.
When the oil is hot, add the courgettes [zucchini] to the pan and cook them for 8 to 10 minutes, stirring occasionally with a wooden spoon to prevent them from sticking to the bottom of the pan.
Raise the heat to fairly high and stir in the salt, pepper, garlic, breadcrumbs and parsley.
Remove the pan from the heat and toss the ingredients gently together until they are well mixed.
Transfer the mixture to a warmed serving dish and serve immediately.
