Candied Sweet Potatoes
|Potatoes||2 Pound (sweet)|
|Butter/Margarine||1⁄4 Cup (4 tbs) (1/2 stick)|
|Brown sugar||1⁄2 Cup (8 tbs) (packed)|
|Lemon juice||1 1⁄2 Teaspoon|
1. Cook sweet potatoes following directions in Fresh Vegetable Cooking Chart. Peel cooked potatoes and cut into 1-inch slices.
2. Put butter and brown sugar into a 1 1/2-quart glass casserole. Cook uncovered in microwave oven 1 minute at High, or until butter and brown sugar are melted.
3. Stir in lemon juice. Add potatoes and toss lightly to coat. Cover with an all-glass lid or waxed paper. Heat in microwave oven to serving temperature (about 6 minutes at High); stir occasionally.
