Pike With Leeks And Oranges

Ingredients
  Leeks 3 , cut into rounds
  Olive oil 1 Tablespoon
  Pike fillets 16 Ounce (2 In Number, 8 Ounce Each)
  Fresh orange juice 1 Cup (16 tbs)
  Bay leaves 1 , crumbled
  Tomato 1 , sliced
  Orange 1 , peeled, pitted and sectioned
  Parsley sprigs 1
  Salt To Taste
  Pepper To Taste
Directions

If using a conventional oven, preheat to 450 °F (230 °C).
In a baking dish, spread leeks.
Season with salt and pepper.
Sprinkle with oil.
Place fillets on top of leeks.
Pour in orange juice.
Sprinkle with bay leaves.
Cover.
Cook in oven 15 minutes or in microwave oven 4-5 minutes, on high.
Let stand 2 minutes.
