Cheesy Spinach Rice
|Frozen spinach||10 Ounce, thawed, stalks removed|
|Eggs||2 , beaten|
|Evaporated milk||13 Ounce|
|Instant rice||2⁄3 Cup (10.67 tbs)|
|Processed cheese||8 Ounce, diced|
|Onion||1⁄4 Cup (4 tbs), chopped|
In a 5 cup (1.25 L) microwave safe casserole dish, place spinach.
Cook in oven 5-6 minutes, on HIGH.
In a 10 cup (2.5 L) microwave safe bowl, mix eggs, milk, rice, cheese, salt and pepper.
Cook 2 minutes, on HIGH.
Continue cooking 3-4 minutes or until cheese has melted.
Fold in onion and spinach.
Pour mixture into a 10 x 6 x 2 inch (25 x 15 x 5 cm) microwave safe baking dish.
On HIGH, cook 10-12 minutes or until a knife inserted in the middle comes out clean.
