  Wild ducks 4 Small
  Thyme sprig 2
  Lard 4 1⁄2 Tablespoon
  Black pepper 1⁄4 Teaspoon
  Onions 2 Large, minced
  Bay leaves 2
  Garlic 3 Clove (15 gm), chopped
  Whole allspice 3
  Flour 7 1⁄2 Tablespoon
  Salt 1 Teaspoon
  Minced celery 1 Tablespoon
  Jerusalem artichokes 6
  Minced parsley 1 Tablespoon
  Sherry 2 Tablespoon
  Cloves 1
  Pepper To Taste
  Salt To Taste

Pick the ducks and clean them inside and out.
Salt and pepper them inside and out and sprinkle with flour.
Melt the lard in a pot and add the ducks.
Let them brown on both sides.
Take the ducks out of the pot and brown the onions and garlic in the lard.
Stir in the flour and brown it.
Put the ducks, celery, parsley, and all seasonings in the pot, add 1 1/2 cups water, and cook 30 minutes.
Peel and quarter the Jerusalem artichokes, add them, and cook until they are tender.
Just before serving, pour in the sherry.
