Marinated Fresh Vegetable

Ingredients
  White wine vinegar 1⁄2 Cup (8 tbs)
  Water 1 Cup (16 tbs)
  Olive oil 1 Tablespoon
  Garlic 1 Clove (5 gm), sliced
  Paprika 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Carrots 2 Medium, peeled and cut into matchstick strips
  Stalk celery 1 , cut into matchstick strips
  Zucchini 1 Medium, cut into matchstick strips
  Sweet red pepper 1 Small, cored, seeded, and cut into matchstick strips
  Capers 1 Tablespoon, drained
Directions

In a medium size bowl, mix the vinegar, water, olive oil, garlic, paprika, and black pepper.
Add the carrots, celery, zucchini, red pepper, and capers and toss well.
Cover and refrigerate overnight.
