Marinated Fresh Vegetable
|White wine vinegar||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Olive oil||1 Tablespoon|
|Garlic||1 Clove (5 gm), sliced|
|Black pepper||1⁄4 Teaspoon|
|Carrots||2 Medium, peeled and cut into matchstick strips|
|Stalk celery||1 , cut into matchstick strips|
|Zucchini||1 Medium, cut into matchstick strips|
|Sweet red pepper||1 Small, cored, seeded, and cut into matchstick strips|
|Capers||1 Tablespoon, drained|
In a medium size bowl, mix the vinegar, water, olive oil, garlic, paprika, and black pepper.
Add the carrots, celery, zucchini, red pepper, and capers and toss well.
Cover and refrigerate overnight.
