Wash the spinach nicely in cold water.
Put in a spinach spinner for drying. Dry them a bit, no need to super dry.
Place them on a board and chop them using a sharp knife.
Pile them back on the spinach spinner.
Take a pan for cooking the spinach. Put it over medium heat and take some extra virgin olive oil.
Put some garlic and fry to flavor the oil and then goes in the spinach, add some black pepper, sauté until the spinach cooks down to 2-3 cups.
