|Parsnips||1 Pound, scraped and thinly sliced|
|Butter/Margarine||3 Tablespoon, melted|
|Brown sugar||1⁄4 Cup (4 tbs) (firmly packed)|
|Lemon juice||1 Tablespoon|
|Ground pepper||1⁄8 Teaspoon, freshly ground|
|Fresh parsley||1 Tablespoon, chopped|
Cook parsnips in butter in a large skillet for 5 minutes, stirring occasionally.
Cover skillet, and cook over low heat until parsnips are crisp tender .
Remove cover from skillet; add brown sugar, lemon juice, salt, pepper, and parsley, if desired, and stir fry over medium heat until parsnips are glazed.
