Vegetables In Brine
|Brine||1 Cup (16 tbs)|
|Green tomatoes||6 (Whole)|
|Celery stalks||3 , cut in 2-3 inch pieces|
|Green peppers||To Taste|
|Garlic||3 Clove (15 gm), halved|
|Mixed whole spices||1 Teaspoon|
To make brine, insert a raw egg, in shell, in water, and add enough salt to water so that egg will break surface of water in the visible diameter of a dime.
Wash all vegetables and place in quart jars.
Fill jars with brine, sealing tightly.
Shake and turn jars every other day for 10 days.
Fill jars with vinegar.
To each jar add garlic, mixed whole spices, and fresh dill.
