Sweet Potato Pie With Pecan
|Pie pastry||1 (For 1 Crust Pie)|
|Cooked mashed sweet potatoes||1 1⁄4 Cup (20 tbs)|
|Eggs||2 , well beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs), firmly packed|
|Melted butter||1 Tablespoon|
|Pecan halves||1⁄2 Cup (8 tbs)|
Prepare pastry and line an 8 inch pie pan.
Chill while you make the filling.
Combine sweet potatoes, brown sugar, salt, and cinnamon in a bowl.
Mix together eggs, milk, and butter and stir into sweet potato mixture thoroughly.
Pour into chilled pastry shell and arrange a circle of pecans around the edge.
Bake in a preheated 400° oven for 45 minutes or until a knife comes out dry when inserted in the center.
