Lovely Layered Lunch
|Head of lettuce||1 Small, torn into pieces|
|Bermuda onions||2 Small, thinly sliced and separated into rings|
|Zucchini||2 Cup (32 tbs), thinly sliced|
|Cherry tomatoes||2 Cup (32 tbs), halved|
|Cottage cheese||4 Ounce, blended|
|Worcestershire sauce||1 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Low fat yogurt||1 Cup (16 tbs)|
1. Layer lettuce, onion, zucchini, and cherry tomatoes in a large bowl.
2. Combine blended cottage cheese, Worcestershire sauce, and mustard. Stir in yogurt.
3. Spoon over layered vegetables. If desired, sprinkle with paprika.
4. Cover and refrigerate 4 to 6 hours or overnight.
