Boil water in a pot. Toss in cauliflower, onion, carrot and chicken bullion cubes.
Add the parsley, cover and simmer.
Once the vegetables are tender, puree in a blender.
Return to the pot, season to taste with salt and black pepper.
Serve with a whole grain bread.
