Roast Vegetable Pasta Sauce

Here is a perfect recipe for pasta.
Ingredients
  Eggplant 1 Small, cubed
  Garlic 1 Clove (5 gm) (whole)
  Tomatoes 1 Large, wedged
  Bell pepper 1 Large
  Carrots 1 Cup (16 tbs), chopped finely
  Olive oil 2 Tablespoon
  Tomato sauce 1⁄2 Cup (8 tbs)
For serving
  Pasta 1 Cup (16 tbs)
Directions

GETTING READY
1. Preheat oven to 400*F.

MAKING
2. On a baking sheet, place eggplant, garlic, tomato, bell pepper, carrots and olive oil. Mix well to coat oil over vegetables.
3. Pop it into the oven and roast for 45 minutes.
4. When the vegetables are roasted through, put it into the blender and blend till smooth.

SERVING
5. Mix the sauce with pasta and serve.

The only time consuming part of the recipe is chopping vegetables and then just pop them in the oven. When the vegetables are roasted, puree them to a sauce like consistency and meal is ready.
