Put through chopper and sprinkle with 1/4 cup salt.
Let stand over night.
Cover with white vinegar and add 1 tbsp.tumeric (or curry), 1 tsp. to 1 tbsp. mustard, 2 tbsp. mustard seed, 1 tbsp. celery seed, 6 tbsp white sugar.
Boil until cooked - 10 - 15 minutes.
Thicken with 1/2 cup cornstarch.
Bottle and wax.
