|Mashed sweet potatoes||2 Cup (32 tbs)|
|Bread crumbs/Cracker crumbs||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Shortening||1 Cup (16 tbs) (For Deep Frying)|
Mix salt and pepper with sweet potatoes; roll into 8 balls.
Put 1 marshmallow into center of each ball; roll each ball in crumbs.
Combine egg and water; dip balls into this mixture.
Roll again in crumbs.
Fry in heated deep shortening about 4 minutes, until golden brown and crispy; drain.
