Sweet-Potato Balls

Sweet potato balls are made with mashed sweet potatoes and breadcrumbs. Filled with a single marshmallow in the center, the potato balls are seasoned to taste and fried to a lovely golden brown.
Ingredients
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Mashed sweet potatoes 2 Cup (32 tbs)
  Marshmallows 4
  Bread crumbs/Cracker crumbs 1 Cup (16 tbs)
  Egg 1 , beaten
  Water 2 Tablespoon
  Shortening 1 Cup (16 tbs) (For Deep Frying)
Directions

Mix salt and pepper with sweet potatoes; roll into 8 balls.
Put 1 marshmallow into center of each ball; roll each ball in crumbs.
Combine egg and water; dip balls into this mixture.
Roll again in crumbs.
Fry in heated deep shortening about 4 minutes, until golden brown and crispy; drain.
