Twice Baked Potatoes are a cheesy, delicious side dish or a simple main dish. You can make them ahead of time, too! Sure to be a hit with your potato-loving friends.
Russet potatoes | 2 Large (about 6 ounces each) | |
Sliced green onions | 1/4 Cup (4 tbs) | |
Sour cream/Plain yogurt | 2 Tablespoon | |
Butter | 1 Tablespoon | |
Salt | 1/2 Teaspoon | |
White pepper/Black pepper | 1/4 Teaspoon | |
Grated cheese | 1/2 Cup (8 tbs) , divided | |
Crispy bacon bits | 1/4 Cup (4 tbs) | |
Steamed broccoli florets | 1/2 Cup (8 tbs) (small) |
GETTING READY:
1.Preheat oven to 350F.
MAKING:
2.Place potatoes on a baking tray and pop into oven. Bake for 1 hour at 350F.
3.Cool the potatoes and scoop the inside part, leaving 1/4 of shell.
4.In a bowl, combine the cored-out potato flesh, onion, half of cheese, sour cream, salt, butter, pepper and mash until smooth.
5.Pack the shell with the mixture mashed.
6.Place on baking sheets and sprinkle remaining cheese over it.
7.Pop into oven and bake for 20 minutes at 350F.
8.Garnish with green onions.
