Fried Calf's Head

  Salt 1 1⁄2 Teaspoon
  Onions 2 Ounce
  Celery 2 Ounce
  Parsnips 2 Ounce
  Flour 2 Ounce
  Eggs 3
  Bread crumbs 5 Ounce
  Lard 7 Ounce

Bone and soak the calf's head for half an hour in plenty of cold water; then boil it gently in salted water along with the onions, celery and parsnips until tender.
Then take out of the stock, place on a dish and set in a cool place.
Cut into 10 slices lengthwise when cool, salt and turn the slices in flour, egg, and bread crumbs.
Fry in plenty of lard until golden brown.
