Ingredients
  Veal breast 4 Pound
  Bread crumbs 2 Cup (32 tbs)
  Salt pork drippings 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Onion 1⁄4 Cup (4 tbs), minced
  Celery 1⁄2 Cup (8 tbs), diced
  Water 1⁄2 Cup (8 tbs), hot
Directions

GETTING READY
1.In the market tell the butcher to make a pocket cut in the veal breast
2.Also preheat the oven to 350F degrees
MAKING
3.Prepare a stuffing by combining remaining ingredients and tossing together lightly
4.Now pack the stuffing into the pocket and sew or skewer edges together
5.In a pan, brown the meat in hot fat, then add 2/3 cup water and cover
6.Cook in a moderate oven for 1 1/2 – 2 hours or until tender
SERVING
7.Serve with a sauce of your choice
