Roast Veal

Ingredients
  Veal 4 Pound
  Flour 1 Cup (16 tbs) (As Required)
  Fat salt pork/Bacon 1⁄4 Cup (4 tbs) (As Required)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Start by preheating the oven to 300F degrees
MAKING
2.Wipe the meat, dredge with salt, pepper and flour
3.On rack of roasting pan, place the meat with fat side up
4.If meat thermometer is used insert it into center of thickest part of meat
5.If cut has no fat or if layer is thin, place strips of salt pork or bacon over top
6.Place in slow oven and cook, uncovered and without water, until tender
SERVING
7.Serve with vegetables
TIPS
A roast may be cut from the leg, the rump or the shoulder. Allow about 1/3 pound per serving.
