Spiced Veal Chops
|Loin veal chops||6|
|Red pepper||1⁄8 Teaspoon|
|Garlic||1 Clove (5 gm), split|
|Worcestershire sauce||1 Teaspoon|
|Water||1⁄2 Cup (8 tbs)|
Have veal-chops cut.about 3/4 in thick, dredge in flour mixed with salt, red pepper, and thyme.
Rub skillet with garlic clove, add lard and* heat.
Brown chops in heated lard on both sides then add water, Worcestershire sauce, and bay leaf, cover, and simmer for 1 1/2 hours.
Serve garnished with lemon cut in six wedges.
