Crepes With Veal

Ingredients
  Thin veal slices 1 Pound, cut into 1 inch square
  Flour 2 Tablespoon
  Vegetable oil 3 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Onions 2 Tablespoon, chopped
  Parsley 1 Tablespoon
  Basil 1⁄2 Teaspoon
  Tomatoes 2 , chopped
  Heavy cream 1⁄4 Cup (4 tbs)
  Crepes 12
  Salt To Taste
  Pepper To Taste
Directions

Dredge veal with flour.
Heat oil and fry the veal until lightly brown.
Move meat to side of pan and saute the minced garlic, onions, and parsley.
Add the basil and tomatoes.
Cook over medium heat until the tomatoes are soft.
Break up with a fork and add cream, salt and pepper and cook over low heat until thoroughly heated.
Cool.
Place a spoonful or two of filling in each crepe.
Roll up and place seam side down in a greased baking dish.
Bake at 350°F for 30 minutes.
Other buffet dishes 'include: stuffed cabbage leaves, stuffed tomatoes, roast chicken, beet greens, quiche, cannelloni, fillet of veal, pork stuffing, and spinach.
