Veal And Mushrooms

  Veal steak 1 1⁄2 Pound
  Butter 2 Tablespoon
  Cooking oil 2 Tablespoon
  Mace 1 Pinch
  Mushrooms 1 Pint
  Brandy 2 Tablespoon
  Whipping cream 1⁄2 Cup (8 tbs)
  Chopped parsley 2 Tablespoon
  Salt To Taste
  Pepper To Taste

Heat oven to 375 degrees.
Trim veal and cut into strips 1/8 inch thick across the grain.
Heat butter and oil in large heavy skillet and add meat.
Brown lightly over moderate heat, stirring constantly.
Sprinkle with 1 tsp. salt, 1/8 tsp. pepper and mace.
Lift out meat with a slotted spoon and put in hot shallow serving dish that can go in the oven.
Keep hot.
Add mushrooms to drippings left in pan (add a little more butter if necessary) and cook over moderate heat, stirring constantly; about 5 minutes or until lightly browned.
Lift out with slotted spoon and put on top of meat.
Sprinkle lightly with salt and pepper.
Add brandy to drippings left in pan and stir well.
Whip cream until soft peaks form and stir into brandy.
Bring to a boil and boilgentlyl minute,stirring.
Pourover meat and mushrooms.
Slip into oven to heat through well, about 5 minutes.
Serve immediately sprinkled with parsley.
