Stuffed Breast Of Veal
|Veal breast||5 Pound|
|Frozen spinach||20 Ounce|
|Minced onion||1⁄2 Cup (8 tbs)|
|Grated cheese||1⁄2 Cup (8 tbs)|
|Dried basil||1⁄2 Teaspoon|
|Bread crumbs||1 Cup (16 tbs)|
|Dried mint||1⁄2 Teaspoon|
|Garlic salt||1 Tablespoon|
|Olive oil||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Cup (8 tbs)|
Have pocket cut in veal.
Prepare spinach according to package directions; drain thoroughly.
Combine spinach with onion, cheese, eggs, basil, bread crumbs, mint, pepper and garlic salt in large bowl; mix well.
Stuff veal with mixture; secure opening.
Place veal in roasting pan; add 1 cup water.
Bake at 350 degrees for 1 hour and 30 minutes or until veal is tender; baste frequently with mixture of olive oil and lemon juice.
