Chopped Calf's Liver

Ingredients
  Calf liver/Beef livers 1 Pound
  Onion 2
  Hard boiled eggs 2
  Rendered chicken fat 3 Tablespoon
  Kosher salt 1 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
Directions

GETTING READY
1) Under running water, wash the liver

MAKING
2) In a saucepan, add the onion and water and the chicken livers
3) Bring the mixture to a boil and lower the flame; cook for about 10 minutes
4) Drain off the liquid and remove and discard the onion
5) Take off the skin from the livers
6) In a mixer grinder, combine the livers, eggs, and the remaining onions and grind till smooth
7) Add the fat, salt and pepper and blend
8) Check for seasoning

SERVING
9) On a platter, arrange lettuce leaves
10) Spoon the liver mixture on the leaves and serve
