Braised Stuffed Breast Of Veal

Ingredients
  Boneless veal breast 2 1⁄4 Pound
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Parsley 2 Tablespoon, finely chopped
  Basil leaf 1⁄2 , crumbled
  Sausage meat 1⁄2 Pound
  Carrots 1 Cup (16 tbs), grated
  Butter 1 Tablespoon
  Celery 1⁄2 Cup (8 tbs)
  Onion 1⁄2 Cup (8 tbs), sliced
  Canned chicken broth 14 Ounce (1 Can)
  Water 6 Tablespoon
  Flour 3 Tablespoon
Directions

MAKING
1) Onto a cutting board, flatten the veal breast
2) Sprinkle with salt, pepper, basil and parsley
3) Mix together the sausage meat and grated carrots into a small bowl and spread onto the meat
4) Roll up the mea from the short end like that of a jelly roll
5) Using heavy string, tie crosswise
6) Into a dutch oven, roast the meat till brown, in butter
7) Add in the celery and onion and saute
8) Add the chicken broth and simmer with a lid on for 2 hours till the meat is cooked through
9) Remove the meat and place onto a carving board
10) Strain and pour the juice with the vegetables sieved and pressed through into a measuring jar
11) Return the juice to the dutch oven and combine the flour and 6 tablespoons of water to make smooth sauce

SERVING
12) Take off the string from the meat and then slice the veal and serve along with the gravy
