Veal with Dandelion Greens

Ingredients
  Boneless veal 1 Pound, diced
  Butter/Margarine 2 Tablespoon
  Onions 2 , sliced
  Carrots 3 Small, quartered
  Diced celery 1⁄2 Cup (8 tbs)
  Mushrooms 2 Large, quartered
  Water 1⁄2 Cup (8 tbs)
  Dandelion greens 1 Pound, cooked
  Basil leaf/1/2 bay leaf 1 Pinch, crushed
  Salt To Taste
  Pepper To Taste
Directions

Brown veal in butter in heavy kettle; add vegetables and water.
Cover and simmer until tender, about 1 hour.
Add greens; season with basil and salt and pepper to taste and heat for 5 minutes.
Makes 4 servings.
