Breaded Veal Chops
|Veal steaks/Cutlets/chops||4 Large|
|Egg||1 , well beaten|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Butter/Margarine/bacon drippings||4 Tablespoon|
|Boiling water||1 Cup (16 tbs)|
|Chopped onion||2 Tablespoon|
|Chopped celery||2 Tablespoon|
1. Wipe the veal with a clean, damp cloth. Pound well on both sides. Dip into the egg,then into the bread crumbs mixed with salt and pepper.
2. Brown the chops on both sides in the hot drippings in a heavy frying pan.
3. Cover them with onion and green pepper. Pour the water into the pan. Bring heat to simmering. Cover and simmer 1 hour or longer.
