Veal And Mushrooms

Ingredients
  Butter/Margarine 1 Teaspoon
  Olive oil 1 Teaspoon
  Fresh mushrooms 8 Ounce, thinly sliced
  Chopped onion 1 Cup (16 tbs)
  Snipped fresh parsley 2 Tablespoon (Divided)
  Garlic 1 Clove (5 gm), minced
  Chicken broth 1 Cup (16 tbs) (Ready To Serve)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Veal stew meat 1 1⁄2 Pound, cut into 1 1/4-inch pieces
  All purpose flour 1⁄4 Cup (4 tbs)
  Eggs 2 , beaten
  Seasoned dry bread crumbs 1⁄2 Cup (8 tbs)
  Dairy sour cream 1 Cup (16 tbs)
Directions

In 2-quart casserole, combine butter, olive oil, mushrooms, onion, 1 tablespoon parsley and garlic.
Cover.
Microwave at High for 3 to 4 minutes, or until onion is tender-crisp, stirring once.
Stir in broth, salt and pepper.
Set aside.
In large plastic food storage bag, combine veal and flour.
Shake to coat.
Place floured veal in egg, stirring to coat.
Lift veal with slotted spoon, allowing excess egg to drain off.
Place veal in another large plastic food storage bag.
Add bread crumbs.
Shake to coat.
Stir veal into vegetables and broth.
Re-cover.
Reduce power to 70% (Medium High).
Microwave for 35 to 45 minutes, or until veal is tender, stirring gently twice.
Blend in sour cream.
Top with remaining 1 tablespoon parsley.
